Lychee and Mango Sorbet

Preparation Time: 6 hours and 45 minutes

Yield: 4 servings

An island kind of sorbet - close your eyes and imagine sitting on a bright white beach with turquoise water at your feet…

List of Ingredients:

1 can of lychees

1 can of mango slices

2 egg whites - free range

¾ cup of caster sugar

AAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAA

Instructions:

Ina saucepan over a medium flame, combine 1 ¼ cups of water with sugar and dissolve.

Simmer till it thickens into a syrup.

Take off the heat.

Pour into a heatproof bowl and let it cool.

Blitz your lychees and mango in a blender.

When smooth, add it to your syrup.

Pour into a shallow dish and freeze for 2 hours.

Put your frozen sorbet in a food processor.

Pour in your egg whites.

Blitz until creamy.

Pour back into your shallow dish and freeze until ready to serve…
