White Chili

White chili is made with chicken, white beans, and green salsa. This rich and thick recipe is delicious topped with sour cream, chopped avocados, and minced cilantro. Chicken thighs are used because they stay tender even with this longer cooking time.

3 BONELESS, SKINLESS CHICKEN THIGHS, CUBED

½ CUP CHOPPED ONION

1 GARLIC CLOVE, MINCED

½ JALAPEÑO PEPPER, MINCED

ONE 15-OUNCE CAN CANNELLINI BEANS, RINSED AND DRAINED

2½ CUPS LOW-SODIUM CHICKEN BROTH

½ CUP GREEN SALSA (SALSA VERDE)

½ TEASPOON GROUND CUMIN

¼ TEASPOON DRIED OREGANO

¼ TEASPOON SALT

⅛ TEASPOON FRESHLY GROUND BLACK PEPPER

1 CUP SHREDDED PEPPER JACK CHEESE

2 TEASPOONS CORNSTARCH

1. Combine all ingredients except cheese and cornstarch in the slow cooker. Cover and cook on low for 7 hours, or until the chicken registers 160°F on an instant-read thermometer.

2. Toss the cheese with the cornstarch in a small bowl and add the mixture to the slow cooker; stir. Cover and cook on low for 15 to 20 minutes or until the cheese is melted and chili thickens. Serve hot.
