Step 3: Pouring the Agar

Monitor the temperature of the agar. It will be extremely hot when you remove it—up to 200°F (93°C)—but it cools quickly. I use an infrared temperature gauge that I purchased for $30 at a hardware store to beam the cooling agar every ten minutes. You can swirl it a bit to mix it while it is cooling. Do not touch the flask with your bare hands; wear sterile gloves. The pouring temperature is around 100°F (38°C); if you miss this window and the agar gels, you can reheat it in your sterilizer to melt it back again. If you are adding any antibiotics (see page 175), plan to do so between 105 and 110°F (41–43°C).
