Vanilla Bean Glaze

1 cup (125g) powdered sugar

1 vanilla bean, split lengthwise and scraped

¼ cup (56g) water

In the bowl of a stand mixer fitted with the paddle attachment, combine powdered sugar, vanilla bean seeds, and water. Combine on low speed until smooth and thick. Consistency should be that of thick glue. Store in an airtight container until ready to use.

12 Granny Smith apples, peeled, cored, and sliced ¼ inch thick

1 tablespoon fresh lemon juice

½ cup (100g) granulated sugar, divided

1 tablespoon cornstarch

½ teaspoon ground cinnamon

1 tablespoon vanilla extract
