4 Using a tapered angled spatula, apply a smooth crumb coat of Vanilla Frosting to the sides of the cakelet. Use enough frosting so that the spatula doesn’t come into direct contact with the cake. This will keep you from dislodging too many crumbs. Do not ice the top.

Cover the cakelet

1 Dust a clean, dry work surface with cornstarch. Roll out 8 oz (225 g) of green fondant into a sheet ¼ in (6 mm) thick and large enough to generously cover the block.

2 Slide your hand under the fondant to lift and gently lay it on top of the cakelet. Use your hands to smooth the top, then the sides of the cakelet. Use two fondant smoothers to gently press and smooth the opposite sides of the cake at the same time, until you’ve smoothed all sides and have clean edges.

3 Use a pastry wheel to cut away the excess fondant.

Finishing touches

1 Roll out 2 oz (55 g) of the pink fondant into a strip ⅛ in (3 mm) thick, ½ in (1.25 cm) wide, and 10 in (25.5 cm) long. Adhere the strip to the bottom of the block using a paintbrush and water.

2 Dust a clean, dry work surface with cornstarch. Roll out the white fondant into a sheet ⅛ in (3 mm) thick. Cut out five scalloped circles with the cutter.

3 Use a small ball tool to add a circular indent in each bump of the scalloped edge.

4 Brush a little water onto the top and sides of each block and adhere the scalloped circles. Be sure to center them.

5 Dust a clean, dry work surface with cornstarch. Roll the remaining pink fondant into a sheet ⅛ in (3 mm) thick. Use the letter presses to imprint five letters on the fondant. Center and cut out the letters using the ¾-in (1.8-cm) circle cutter.

6 Brush a little water onto the scalloped circles and adhere the letter circles.
