For espresso marshmallow, replace the initial cup (75 ml) water with cup (75 ml) warm (not hot) coffee and add 1 tablespoon (3 g) instant espresso powder. Proceed per the original recipe instructions.

For chocolate marshmallow, replace the initial cup (75 ml) water with ½ cup (120 ml) warm coffee that’s been combined with ¼ cup (20 g) of the darkest unsweetened cocoa powder you can find. Add 1 extra teaspoon (2.5 g) gelatin. Chocolate marshmallows are denser due to the cocoa powder content, but they are incredibly delicious. Dredge in cocoa powder instead of the cornstarch in Option 1.
