white sesame biscotti

The trademark Italian cookie gets a subtle Japanese tweak with the addition of white sesame seeds. Although biscotti are traditionally served with coffee, I find these to be wonderful with a cup of green tea. Don’t let them rest for more than five minutes between the first and second bake, otherwise they’re likely to crumble when you cut them apart.


¼ cup (½ stick) / 57 g unsalted butter, melted

1½ tablespoons vegetable oil

1 large egg

½ cup / 99 g granulated sugar

¾ cup / 94 g bread flour

¾ cup / 83 g cake flour

1½ tablespoons cornmeal

2 tablespoons white sesame seeds, toasted

½ teaspoon baking powder

¼ teaspoon salt

⅓ cup / 27 g chopped roasted almonds

2 tablespoons chopped pistachios
