3 cups long-grain white basmati rice

3/4 cup vegetable oil, butter, or ghee*

1 medium onion, peeled and sliced

1 pound skinless, boneless chicken or meat (lamb, veal, beef) cut in 1-inch cubes

1 large head green cabbage, washed and cut into 1-inch pieces

½ teaspoon salt

½ teaspoon freshly ground black pepper

1 teaspoon red pepper flakes

1 teaspoon sugar

1 tablespoon ground cumin or caraway seeds

1 tablespoon Persian spice mix (advieh)*

6 medium tomatoes, peeled* and chopped or 1 pound sliced and peeled canned tomatoes, drained

2 tablespoons plain yogurt

1 teaspoon ground saffron threads,* dissolved in 4 tablespoons hot water
