Curry Chicken with Lime

Ingredients

14-oz/400g coconut cream

½ red chili pepper, chopped

1 red bell pepper, sliced

2 cloves garlic

1-in ginger

1 leek

1 1/3 lb/600g chicken thighs, boneless

1 tbsp curry powder

2 tbsp coconut oil

2 stalks lemongrass

Instructions

Crush up the rough areas of the lemongrass.

Dice the chicken into coarse pieces.

Heat the oil in a large skillet.

Grate the ginger and then cook it with the curry and lemongrass.

Place half of the chicken in the skillet and cook until browned. Add some pepper and salt.

Remove the chicken only, and then add in the rest of the chicken. Add pepper and salt and brown the chicken.

Remove the chicken, but keep the lemongrass in the skillet.

Slice up the leek and sauté it with the garlic and other veggies. Allow the veggies to become golden, but keep their crispness.

Add in the chicken and coconut cream and allow everything to simmer for 5-10 minutes.
