Heat a small splash of oil in a large frying pan over a medium heat, and fry the onion and celery together with a pinch of salt. After about 5 minutes, add the garlic, fennel seeds and chilli flakes, and cook for another 2 minutes.

Meanwhile, slice open the sausages lengthways and remove the meat from the casings. Crumble the meat into the pan with the vegetables and spices, add another splash of olive oil then let it brown, breaking it up with the back of a wooden spoon, around 10 minutes. Add the undrained chopped tomatoes and wine, and bring to the boil. Reduce the heat to low and let it cook gently for 45 minutes–1 hour. Taste and season with salt and pepper. You now have 4 portions of pasta sauce.
