Grandpa Sardines


A sardine toast is only as good as the sardines you purchase. This is not a place to skimp. My grandfather loved canned sardines. He was certainly of the era during which canned sardines were a very regular pantry item. They may not be in style now, but trends are cyclical and grandfathers are always right.

¼ cup olive oil

1 cup chopped cilantro

1 garlic clove

2 tablespoons freshly squeezed lemon juice

½ teaspoon red chili flakes

4 ½-inch-thick slices soft grainy whole wheat bread, pan-toasted

1 4-ounce tin good-quality sardines packed in oil

1 tablespoon lemon zest
