It is a sad paradox that a land as fertile as Cuba should have such problems feeding its people. During the so-called Special Period of the early 1990s, food shortages became serious and distribution of harvested fruit and vegetables remains a problem. Ration books no longer provide enough to live on and are expected gradually to be phased out, leaving poor Cubans with uncertainty. However, those with plenty of money (tourists and a small number of Cubans) are immune from hardships and get the most and best of what little is available. Nevertheless, do not come to Cuba expecting memorable gastronomic experiences. Cuba once had a respectable criollo (Creole) cuisine, a fusion of Spanish and African culinary traditions. But many Cubans now have been reduced to eating simple box lunches and sandwiches. Many restaurants have no choice but to offer standard ‘chicken or pork’ main courses, along with rice and beans. Most hotels play it safe by offering international fare.
